
Raw Lemon Blueberry Bites

These little bursts of goodness are naturally sweetened, no-bake, and loaded with bright lemon and juicy blueberries. They’re the perfect midday pick-me-up, pre-workout bite, or something to sneak from the fridge when no one’s looking.
They're chewy, a little zesty, and covered in coconut for that extra “wow” factor. Let’s roll!
Ingredients (Makes about 25 bites)
Dry Ingredients:

3 cups cashews

2 cups shredded coconut

2 cups dried blueberries

1½ cups dates, pitted

2 tbsp lemon zest
-
½ tsp sea salt
Wet Ingredients:

¼ cup lemon juice

1 tsp vanilla extract
How to Make Them
1️⃣ Mix the Dry – In a big bowl, combine cashews, shredded coconut, dried blueberries, dates, lemon zest, and sea salt.
2️⃣ Add the Wet – Pour in the lemon juice and vanilla, then mix everything together by hand to start softening it all up.
3️⃣ Process the Mix – Work in batches if needed: scoop the mixture into a food processor and pulse until it begins to hold together. It should look chunky but sticky enough to form into a ball.
4️⃣ Final Mix – Once all of it has been processed, return everything to a bowl and give it one last hand mix to make sure it's evenly combined.
5️⃣ Scoop & Roll – Use a small cookie scoop (or your hands) to portion the dough, roll into balls, and coat each one in extra shredded coconut for a pretty finish.
