Crispy Roasted Chickpeas — Vegan, Gluten-Free High-Protein Snack

This savory, crunchy snack is healthy, satisfying, and a breeze to whip up! Enjoy on salads, in bowls or just a yummy snack. Here’s how to make it:

Ingredients:

  • (2) 15 oz. Cans of Chickpeas
  • Oil (any variety works!)
  • Salt & Pepper
  • Paprika
  • Chili Powder (optional for a spicy kick!)

Instructions:

  1. Line a sheet tray with paper towels and spread out the chickpeas. Pat them dry to remove as much moisture as possible—the drier, the better!
  2. Preheat your oven to 400°F and discard the paper towels.
  3. Toss the chickpeas with ½ cup of oil and season with 1 tablespoon each of salt and pepper. Make sure they're well-coated!
  4. Bake for 10 minutes to dehydrate the chickpeas.
  5. Remove from the oven and toss with 4 tablespoons of paprika. If you love spice, add 1 tablespoon of chili powder.
  6. For extra crunch, bake for another 5-10 minutes, depending on your preferred crispiness.
